Building Flavor with a French Classic: Cassoulet

Learn techniques for building flavor as you learn to cook a classic cassoulet, a stewlike dish of beans and pork. Big Spoon chef, Jesse Diamond-Brown, will cover the basics of starting with a soffrito as well as knife skills as we prepare the dish.

This series is called Big Spoon @ the Harvest Kitchen: Savory Essentials. Each class features a different talented cook from Big Spoon Kitchen in Potsdam. These new workshops all feature ingredients grown or raised in the North Country and includes hands-on opportunities, samples, and recipes.
