Exploring Root Vegetables: Harness the Flavor!

  • Thursday, December 10, 2020, 1:00 PM - 3:00 PM

What grows well in our North Country summers and lasts all winter? Root vegetables! Let's dive into the common and not so common vegetables and learn flavorful techniques to keep our winter meals interesting. This lively online class will expand beyond tasty recipes to include the historical background along with handy knife skills to prep carrots, beets, potatoes, celeriac, rutabagas, parnsips and Jerusalem artichoke.

The instructor for this demonstration is Flip Filippi, Local Food Program Leader and co-owner of the community farm littleGrasse Foodworks. The class will be filmed live from the Harvest Kitchen at the Extension Learning Farm.

All pre-registered participants will receive the link to the class recording along with the recipes. This class is made available on a sliding scale from $0-30. If you are able to contribute towards continued programming, your support is appreciated.

This class is offered as part of the extension Initiative Celebrating Local Food: A Culinary Series. Photos used in publicity for this class were captured as part of Extension's Farm-to-Table Initiative, and feature local business Big Spoon Kitchen.
